Kabob Digi (Persian Pan Kabob)

Kabob Digi means Pan Kabob in Farsi. This recipe is a quick and easy way to make tasty Kabobs. To save time, I usually serve it with bread instead of rice. Below is a picture of what it should look like in the pan before the tomatoes are cooked.

Ingredients

  • 1 medium onion (grated)
  • 1 pound ground beef or turkey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground turmeric
  • 1 tablespoon olive oil
  • 2 tomatoes

Recipe

  1. Peel the onion. Once peeled, grate the onion in a mixing bowl. Add the ground beef or ground turkey to the mixing bowl. Mix with your hand.
  2. Add salt, pepper and turmeric to the meat mixture. Mix well with your hand until fully combined.
  3. Add oil to a frying pan. Add ground meat mixture to the pan and pat it down so that it takes up the entire pan.
  4. Cook the meat on medium heat and cover the pan with a lid. Once you notice juice from the meat in the pan, use a spatula to divide the meat into strips.
  5. Uncover the pan and let the meat continue to cook. While the meat is cooking, cut the tomatoes into wedges. Once all of the juice has evaporated in the pan, flip the kabobs over and add the tomato wedges to the pan. Place the tomatoes near the divisions in the meat, so that some areas of the tomatoes are touching the pan.
  6. Once both sides of the kabob have browned, the kabobs are complete. Serve with bread or rice.
